Vegetable Chila (Pancake)
Ingredients
1 cup mung dal flour or multi-grain mix flour, 1 teaspoon ginger garlic paste, 2 teaspoon finely chopped coriander leaves, ½ cup grated carrot & cabbage, 1 green chilli finely chopped, ¼ teaspoon turmeric and enough water to make the batter.
Method
Mix all the ingredients and add enough salt and water and make a fine batter. Heat the pan and grease it with oil or ghee. Stir the batter evenly and cook a pancake for approx. 2 minutes each side until it’s golden. Serve with green chutney. This pancake is tasty, low in fat and provides you with enough proteins.
Methi Thepla
Ingredients
50 gm. millet flour, 50 gm. yellow gram flour, 1 cup fenugreek leaves, 2 tsp. coriander leaves, 2 tsp. ginger-garlic paste, 2 pinch turmeric powder, ¼ tsp. red chili, 1 crushed green chili (optional), 2 tsp. ghee. Salt to taste.
Method
Mix the millet and yellow gram flour together. Add chopped coriander and fenugreek leaves. Add all other ingredients and ghee to prepare a soft dough. Use a little water too if required. Roll it into thin chapattis. Bake both sides on a hot griddle and serve hot. This less carb, high protein thepla is the best option for lunch and dinner.
Tofu Spinach Masala
Ingredients
2 teaspoon oil, 1 pinch cumin,1/4 tsp chopped garlic, 1 onion,1/2 tsp green chili paste, 1/2 tsp garam masala, salt as per taste. Garcia fruit 5 gm, Spinach 1 bunch, Tofu –sliced (soy paneer) 1 cup, coriander leaves 5 gm.
Method
Remove the stem from spinach, wash and cook the spinach leaves in boiling water for 2-3 minutes. Filter the water and grind the spinach leaves to make a paste. Heat the oil in the frypan add cumin and chopped garlic, stir well till light brown. Add onion with remaining spices, stir for 2-3 minutes. Add spinach puree and tofu cubes and mix well. Simmer for 10 minutes and serve hot.
Daalia Salad
Ingredients
Chickpea split roasted (Chana daal dalia split) ¼ cup, crushed onion or onion juice 2 tsp., chopped coriander leaves ½ tsp., chaat masala (optional) 1 pinch.
Method
Crush chickpea split and mix all other items well and serve. This low fat salad can be eaten any time between a main meals if you feel hungry.
Boiled vegetables
Ingredients
One cup each of medium size sliced bottle gourd, white pumpkin, yellow pumpkin, soft gourd and onion. For garnishing ¼ teaspoon black pepper powder, 3 tablespoons chopped coriander leaves and salt to taste.
Method
Steam the sliced vegetables till it becomes soft. Heat 1 teaspoon olive oil or sunflower oil in a pan, add salt and black pepper powder and add the boiled vegetables in it and sauté for 2-3 minutes, garnish with coriander leaves and serve hot. You can have this easily digestible zero fat vegetables as many times in a day since it improves metabolism, reduces fat and you feel fresh and energetic whole day.
