Vegan Shepherd's Pie Recipe:
Ingredients:
- 2 cups cooked lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, corn)
- 2 cups mashed sweet potatoes
- 1/2 cup vegetable broth
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and sauté until the onions are translucent.
- Add the mixed vegetables to the skillet and cook for a few minutes until they are tender.
- Add the lentils, vegetable broth, thyme, rosemary, salt, and pepper to the skillet. Stir well to combine.
- Transfer the lentil mixture to a baking dish and spread it evenly.
- Spread the mashed sweet potatoes over the top of the lentil mixture.
- Bake the shepherd's pie for 25-30 minutes or until the sweet potatoes are golden brown.
