Vegan Shepherd's Pie Recipe:


  • 2 cups cooked lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 cups mashed sweet potatoes
  • 1/2 cup vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste



  • Preheat the oven to 375°F.
  • In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and sauté until the onions are translucent.
  • Add the mixed vegetables to the skillet and cook for a few minutes until they are tender.
  • Add the lentils, vegetable broth, thyme, rosemary, salt, and pepper to the skillet. Stir well to combine.
  • Transfer the lentil mixture to a baking dish and spread it evenly.
  • Spread the mashed sweet potatoes over the top of the lentil mixture.
  • Bake the shepherd's pie for 25-30 minutes or until the sweet potatoes are golden brown.
