As we gear up to celebrate Republic Day 2024, let’s add a healthy twist to our traditional and cultural festivities with a vibrant and nutritious Ayurvedic tricolour salad. For the saffron layer, we will use boiled orange carrots. This ingredient not only imparts a vibrant hue but also provides a rich source of vitamins, antioxidants, and fiber. Carrots are known for their eye-healthy beta-carotene, and it will add a delightful crunch and more vitamin C to the mix.
White Layer:
Moving on to the white layer, we’ll incorporate ingredients such as cucumbers, radish and coconut. Cucumbers are hydrating and refreshing, and a touch of sweetness, and coconut lends a creamy texture and a subtle, sweet flavour. Together, these ingredients create a refreshing and nutritious base for our tricolour salad.
Green Layer:
Finally, for the green layer, we’ll include a mix of blanched spinach, boiled green peas, boiled broccoli and sauteed green bell peppers. Spinach is packed with iron and other essential nutrients, while green peas provide protein and fibre. Green bell peppers add a pop of colour and a dose of vitamin C, making this layer not only visually appealing but also incredibly nutritious.
Dressing:
- A pinch of rock salt
- A pinch of black pepper
- Finely Chopped garlic (1-2 clove)
- ⅕ tbsp of cumin powder
- 1 tbsp of olive oil
- ⅕ tbsp of cumin seeds (crushed)
- Sprinkle some oregano
- 2 green chillies finely chopped (optional)
- Coriander leaves finely chopped
- Add some honey (optional)
